The Diamond Horseshoe Reveals Limited-Time Pop-Up Menu

The Diamond Horseshoe will soon transition from Jessie’s Roundup and back into a restaurant. But it’s not returning to what it was before the Toy Story crew moved in for Cool Kids Summer.

Before their arrival, The Diamond Horseshoe served the same all-you-care-to-enjoy menu as Liberty Tree Tavern, its next-door neighbor. That meant pot roast, turkey, mashed potatoes, macaroni and cheese, and Oooey Gooey Toffee Cake.

But come September, guests will be treated to a limited-time pop-up featuring fancy bacon, spicy lemonade, and margaritas. That’s a big departure from Thanksgiving dinner.

Disney has only previewed three items so far:

Charcuterie

Cured beef, ‘fancy bacon’, smoked pork, green chile cheese, smoked cheddar, and pickles

Enchanting Ember Lemonade

Minute Maid Premium Lemonade, strawberry, and hot honey garnished with a chili-lime rim (non-alcoholic)

Cactus Rose Margarita

LALO Blanco Tequila, prickly pear, lime, and agave

Jessie’s Roundup runs through September 8, 2026. Disney hasn’t shared when this pop-up will take over the space. Reservation details are also not available, but Disney said that walk-ups will be welcome.
